Barbecue Sauce

  • 2 med. Serrano peppers
  • 1 small onion
  • 2 large tomatoes
  • 3 garlic cloves
  • 1/4 cup apple cider
  • salt
  • 1/2 cup molasses
  • 3 tbsp. honey

TODO: the cider, molasses, and honey amounts need to be checked.

Peel the tomatoes. Cut onion and peppers. Combine in blender with molasses, honey, and cider and blend. Taste, and the sauce should be quite spicy. Add salt until the spiciness is cut and the sweetness of the honey comes clearly through. Of course one can always adjust to taste, but I like to leave off before the sauce becomes salty. I love salt, but individuals can add to taste themselves so this produces a more versatile sauce.

Depending on the application, you can render some or all of the sauce in order to thicken it.

Variations

For a smokier sauce, use Chipotle peppers.
