Barbecue Seitan Sandwhich

- olive oil
- 1 medium onion
- 1 package seitan (chicken style)
- barbecue sauce
- butter
- slices of bread
- Monterey jack cheese
Cover about half of medium skillet with olive oil. Sauté onions until translucent--about 5 minutes--adding a little water to keep them from sticking towards the end. At the same time, prepare the bread as for grilled cheese.
After onions are ready, add seitan and continue to cook onions with seitan for 1-2 minutes. Add barbecue sauce, reduce heat and let it sit till the sauce is warm.
Combine seitan and bread. Makes 3 servings and keeps well.
