Fried Rice

- 1-2 green onions
- 3 large eggs
- 1 tsp salt
- pepper to taste
- 4 tbsp oil
- 4 cups cool, cooked rice
- 1-2 tbsp soy sauce
- Wash and finely chop onions.
- Lightly beat eggs with salt and pepper.
- Heat wok with 2tbsp oil.
- Scramble eggs in wok; cook fully, but not dry.
- Remove eggs from wok and Add 2tbsp oil; heat.
- Stir fry rice with onions, eggs, and sauce.
For basil fried rice, add basil, increase onions and pepper.
I like lots of eggs myself, fine to increase.
Cooking more than 4-5 eggs at once in the wok can take awhile, probably quicker to do in batches.
