Fried Rice

  • 1-2 green onions
  • 3 large eggs
  • 1 tsp salt
  • pepper to taste
  • 4 tbsp oil
  • 4 cups cool, cooked rice
  • 1-2 tbsp soy sauce
  1. Wash and finely chop onions.
  2. Lightly beat eggs with salt and pepper.
  3. Heat wok with 2tbsp oil.
  4. Scramble eggs in wok; cook fully, but not dry.
  5. Remove eggs from wok and Add 2tbsp oil; heat.
  6. Stir fry rice with onions, eggs, and sauce.

For basil fried rice, add basil, increase onions and pepper.

I like lots of eggs myself, fine to increase.

Cooking more than 4-5 eggs at once in the wok can take awhile, probably quicker to do in batches.
