The secret to great grilled cheese is to get both sides of the bread toasted. Obviously depending on the size of the skillet, you'll be able to do less or more slices.

Pre-heat the skillet. Add butter and slices of bread in multiples of two. If you need to cut the cheese, do so now. Once the bread is toasted on one side, remove half the slices, add butter, and flip the remainder over. Now add cheese to the bread in the skillet, which is now toasted side up. But the toasted side of the bread you removed over the cheese so that the non-toasted side is up. Now add butter again and flip the sandwiches so that the final non-toasted side get toasted.
