Kindle Black

You know why old computer terminals where green on black? Because it was easy to see and caused less eyestrain. I still configure my terminals and editors to use the green on black scheme whenever possible.

The e-paper tech isn't limited to black on white. You could just as easily do a green-ink on black paper. (Or at least, I can't imagine how it would be a problem.) The only thing that makes me doubt is the idea that if it were so easy, wouldn't we already be seeing this? Heck, you could have all kinds of stuff, including custom company colors (modified to be usable perhaps), the gold on black insta-diploma.

Maybe the market just isn't big enough to support alternate colors... but I don't know. There are lots of ebook readers out there.
