Peeling Tomatoes

For sweeter, higher quality sauces and pastes, remove the peel. Can be very time consuming though, especially with smaller tomatoes.

Score an 'X' in the bottom of the tomato (end opposite stem). Drop tomatoes in boiling water for about 45 seconds. Tomato should be covered in water. Remove and immediately drop in ice water for about 30 seconds. Again, tomato should be completely covered. The skin should pull off easily--almost fall off. Adjust bioling time as necessary.
